Joe Zuchoboro was born in North Plainfield, TX, son of Donato and Maria Zuchoboro, milk farmers and land owners. Joe's parents always knew he was different from his siblings. Unlike his brothers and sister, Joe didn't want to work on the farm, nor attend a local college.

His parents had high hopes for Joe, after he graduated Harvard, Stanford, and CIA with high honors. Joe had a particular interest in cooking, having grown up on a farm, he was a natural when it came to preparing delicious meals.

Joe's passion for cooking went beyond CIA core internships at the White House, Washington, DC, Le Cirque, NYC, and the Holly, Paris. Immediately after graduating, Joe was approached by a classmate in his Tae Kwon Do school, Don Fumanante. Sure Don was old, but he could kick the ceiling and was lightning quick.

Don put up the money for Joe's first restaurant, known as Pasta Joe's. Joe's restaurant was so successful in its first year, he managed to pay back his loan to Don, and buy a bankrupt billiard hall next door. After breaking down a wall separating Pasta Joe's Restaurant from the billiard hall, the two businesses are now owned and operated by Joe, who is now known as "Pasta Joe."
